Asparagus with Dijon Thyme Shallots

Asparagus with Dijon Thyme Shallots

With longer, warmer days, Spring calls for lighter meals and easy sides, like this Asparagus with Dijon Thyme Shallots.

Gabby G YES! I love everything about this recipe, especially at this time of year, I am craving fresh veggies and especially asparagus! Yum!
Dana I love this idea. I typically keep my asparagus pretty simple with olive oil, salt, and pepper, but I'm loving the idea of piling on tangy shallots!

Naturally Dyed Easter Eggs

Naturally Dyed Easter Eggs

Using a variety of vegetables and spices, naturally dyed Easter eggs are a fun activity your kids will love. I’ll be the first to admit that I’m not a very crafty person.

Natalie Browne Yes, the red onion is a surprise, but the surprise is part of the fun. The red cabbage is usually blue, but this year, in some areas it turned teal on the eggs as it dried. So cool to see. Have a lovely weekend!
Natalie Browne Thank you! I’ve made these eggs before, but used stockings with a lace print and they turned out so beautifully, as well. It’s such a fun craft/experiment to do with the kids. I’m very sure I don’t have the artistic talent to make pysanky eggs. They're So beautiful and detailed.

Natalie Browne Perfect! For me, the leftover wine is often the trickiest ingredient to come by 😂
Natalie Browne Thank you! There’s just something soothing about those slow Sunday meals, right?! I’m looking forward to the fresh and light Spring dishes, though, too ☺️

Natalie Browne Thanks Leanne! I do like to have a big bowl of salad in my fridge for healthy eating throughout the week. It's just makes lunches so much simpler. Have a great weekend!
Natalie Browne Yes, you cook it just like you would rice, although with a little extra water. It's a nice hearty grain, perfect for bulking up a salad and, as far as grains go, it's got a relatively high amount of protein, which makes it a good little booster for plant-based dishes. :)

Kale, Lentil & Artichoke Salad

Kale, Lentil and Artichoke Salad

If you’d told me 10 years ago that I’d one day be raving about a salad featuring kale and lentils as the key ingredients, I probably would have bet money to the contrary.

Natalie Browne THanks, Sean! It was a strangely addictive salad that I happily ate for 3 days, lol. I'm glad I"m not the only one mesmerized by the spinner :)
Natalie Browne I suppose as you get older, you're more open to trying new things, too. With food blogging, too, I find I'm exposed to so many different ideas that it becomes inspiring to try new things.
