This past week we were able to get away for a few days vacation at our family cabin. About a 4 hour drive away, our cabin has been in my husbands family for about 50 years. Aside from a few renovations, much of the cabin is still the same and old family photos line the walls. Our kids love our vacations at the cabin. They look forward to it all year long, sometimes going as far as attempting to pack their suitcases a few months in advance. With very limited cell phone and internet service, it’s the perfect place to go to relax. Unfortunately, it’s also the perfect place to overindulge in food and drink and we often come back feeling a little sluggish. This week, it’s time to get back to our routines, including more fruits and vegetables, not so many unhealthy snacks, and perhaps, just maybe, a little less wine.
The best way to get back on track, I figured was to head to the market to stock up on some fresh produce. I love the market in the summer. All the fresh, colourful fruits and veggies make me feel like a kid in a candy store. That’s how this summer market salad was born. With a rainbow of colours to choose from, I chose them all. I then had to figure out what to do with them. Sweet, delicious and fresh, this salad is summer in a bowl. I hope you love it as much as I did.
3 Cups mixed greens
2 nectarines, cut into bite size pieces
1 Cup blueberries
1/2 C sunflower seeds, toasted
1/2 Cup fresh basil, thinly sliced
1/4 Cup extra virgin olive oil
1/4 Cup lemon juice
2 tbsp honey
2 tsp fresh lavender
salt to taste
Add the first 5 ingredients to a salad bowl and set aside.
In a small bowl, whisk together the remaining ingredients. Drizzle over the salad mixture and toss gently. Serve immediately.
