Pumpkin Pie Overnight Oats

Pumpkin Pie Overnight Oats are quick and easy to throw together the night before, so you have a delicious and healthy breakfast to wake up to. 

Do you ever wake up completely starving? I mean, like with the tummy grumbles and all. I do, all the time. I’ve never understood those people who can go the whole morning without eating breakfast. Or when some people say they “forgot to eat”. How does that even happen? The whole concept is completely foreign to me. I wake up with two immediate priorities every day. First coffee, followed immediately by breakfast. If I were to try the whole “forgetting breakfast” thing, I’d be so hangry, I’d probably have lost most of my friends by lunchtime. I wish I were joking, but my friends know me and they know it’s best if I’m kept well fed, lol.

With two little ones to get off to school and now a puppy to take care of, as well, the mornings fly by so fast. It’s hard to get everyone up and ready for the day, as well as fit a nutritious breakfast in. It’s not unusual for me to be sipping a smoothie at the school yard or frantically stuffing a few bites of an egg in my mouth on my way out the door. It may not always be pretty, but breakfast should be a priority, for many reasons, not just to keep the hanger away. A healthy breakfast will help you maintain your energy throughout the morning and is more likely to contribute to healthy lunch choices simply because you won’t be starving and grabbing at the quickest, most convenient food option.

With that in mind, wouldn’t it be great if you could wake up to breakfast already made? These Pumpkin Pie Overnight Oats are a great little breakfast for mornings when you’re short on time.

½ Cup Old fashioned oats

1 tbsp chia seeds

¼ tsp cinnamon

¼ tsp all spice

¼ tsp nutmeg

¼ Cup pumpkin puree

2 tsp maple syrup

¼ Cup almond milk

¼ Cup plain greek yogurt

2 tbsp pumpkin seeds for garnish (optional)

Stir together all ingredients and divide between two bowls or cups. Cover and store in the fridge overnight. Top with pumpkin seeds before serving, if using.  Serves 2

  1. I am like you, I cannot even think of skipping breakfast. That is my number 1 priority and I always make sure I make time to sit and enjoy it (but I don’t have two little ones to take care of 😉 ). In January I’ll be back to work and I will rely on delicious breakfast like this, ready when I wake up and that will keep me going till lunch time. Thank you!
