Apple Walnut Salad with Creamy Dijon Dressing

Sweet apples, crunchy walnuts and a creamy, tangy dijon dressing, this Apple Walnut Salad is a nutritious way to kick off the New Year.

With the busy Christmas season over and the New Year just beginning, I’m looking forward to getting back into the normal swing of things and back to healthy eating. This Apple Walnut Salad with Creamy Dijon Dressing is the perfect way to start.

When January hits, healthier eating becomes the goal for many people and, I think it’s safe to say, salads start showing up on everyones meal plans. Let’s face it, when people think “healthy”, salads immediately come to mind. For me health is all about balance. It’s important to watch what we’re putting in our bodies, but at the end of the day, eating should be enjoyable, not a chore. And, if you’re eating the same salad for days on end, it’s going to get pretty boring, pretty fast.

I’m not much of a salad eater, as in, I don’t want a plain green salad with the same veggies every day. If I’m eating salad, I want it to be loaded with flavour, texture and filling elements. Something satisfying, that makes healthy eating fun and delicious, rather than a means to an end.  This Apple Walnut Salad checks all the boxes for me; it’s loaded with healthy ingredients, but also has a couple fun add-ins that make it enjoyable to eat. It’s got a little sweet, a little tart, a little crunch and a little creamy. A perfectly tasty way to stay on the healthy eating train this year.

Cheers to a healthy 2018!


1 1/2 Cups mixed greens

1/2 Cup chopped red cabbage

1/2 Cup lentil or chickpea sprouts

1 small sweet apple, sliced

¼ Cup walnuts, toasted

¼ Cup quick pickled onions

Layer all ingredients and serve with creamy Dijon dressing. Serves 2.


Creamy Dijon Dressing:

2 tbsp extra virgin olive oil

1 tbsp white wine vinegar

½ tsp thyme

1 tbsp Dijon mustard

1 ½ tsp honey

1 tbsp cream

Whisk together all ingredients and serve.

  1. I’m loving this Creamy Dijon Dressing! I make a simple vinaigrette like this, but I’ve never added cream to it. Brilliant! I love the crunch of apples and walnuts in this healthy salad.

  2. I love the colors of this salad. It looks healthy but not in the minimalist way but in a delightfully delicious way. I like all the textures and diversity of flavors from sweet to savory. Thus looks like a great way to kick off 2018 nutritionally without sacrificing flavor. Great Job!
