Balsamic Braised Chicken

A set it and forget it kind of meal, this Balsamic Braised Chicken takes only a few minutes to prep and then slow cooks itself to a delicious, family friendly meal.

Finally, Spring seems to be on the horizon. The weather is still a little hit-or-miss, but overall the Winter bite seems to be less present in the air and the first buds of Spring are starting to poke through the ground. I love the change of the seasons, no matter what time of year. At the end of Summer, I’m usually ready for Autumn, and always at the end of Winter I’m ready to get Spring started. One thing I will miss, though, are those low and slow cooked dinners that have made themselves a part of our cold, Winter Sunday afternoons. The type of meals that warm up the house with their aromas and bring comfort and coziness.

I made this Balsamic Braised Chicken a couple weekends ago. I woke up feeling like I wanted to have a lazy Sunday, with a hearty, comforting meal at the end of the day, but I also wanted that meal to require minimal work because, again, I wanted to be lazy. With a little white wine left in my fridge from the night before and some chicken pieces picked up at the market, this meal was prepped and in the oven in minutes, freeing up the rest of the afternoon.

Ingredients

  • 2 tbsp extra virgin olive oil
  • 4 - 6 bone in chicken legs or thighs (skin removed)
  • salt and pepper to season
  • 3/4 Cup white wine
  • 1/4 Cup balsamic vinegar
  • 1 small onion, thinly sliced
  • 3 carrots, cut into bite sized pieces
  • 2/3 Cup sliced mushrooms
  • handful of fresh Italian flat leaf parsely, chopped

Instructions

  1. Preheat oven to 300 F°
  2. In a large, oven-proof pan heat the oil over medium heat
  3. Add the chicken and sear it on both sides, about 5 minutes per side
  4. Evenly pour the white wine and balsamic vinegar over the chicken
  5. Add the onions, carrots and mushrooms to the pan, then place the pan in the oven.
  6. Cook for about 1 1/2 - 2 hours. The chicken should be cooked through, but still juicy and tender.
  7. Sprinkle with parsley before serving.

  2. This balsamic chicken sounds so flavourful Natalie! Love it! And I totally agree with you. I’m looking forward to spring but will miss slow cooker Sundays and all the hearty, comforting meals that go along with that!
