This year has started out with a bang for me. Just off the hectic holiday season, I’ve thrown myself into a couple of new, exciting opportunities. One of which I’m proud to share today. After a two week binge of indulgent food and way too much wine, my scale and I had a falling out. I think it’s trying to tell me that I should get back to my normal eating and exercise routines. And maybe ditch the wine for a bit. One of my biggest pitfalls when I’m trying to watch what I eat is that I’m a big night time snacker. As much as I tell myself to eat a piece of fruit or some veggies at night, I still feel deprived if there aren’t some carbs attached to my snack. One of my favourite things to snack on is taco chips with home made salsa. No matter what brand you buy, you can’t beat the flavour or freshness of the home made variety. When I do make my salsa, I tend to make a large bowl of it, so for this post I’ve halved my recipe. You can easily make more or less depending on your needs (or how many people you’re willing to share it with). If you use a food processor you can make this recipe in just a few minutes. I prefer to hand chop the veggies, though, simply because I like the texture better. Also, because I’m clearly too particular about my salsa. However you choose to make it, this recipe is super simple, really delicious and incredibly nutritious…depending, of course,  on the quantity of taco chips.

3 bell peppers

1 jalepeno, seeded and diced small

2 roma tomatoes

1 small onion

1 clove of garlic, minced

1 tsp oregano

2 tsp cumin

1 tsp chili powder

1 tsp red pepper flakes

1 lime, juice only

1/4 Cup cilantro, chopped

salt to season

Chop (or place in food processor) the bell peppers, tomatoes and onions. Place in a large bowl. Add the jalepenos, garlic, oregano, cumin, chili powder, red pepper flakes and lime juice. Stir well. Add the cilantro and stir gently. Season with salt as necessary.
